Mango Marinade:
2 mangoes-peeled & chopped
2 Tbs lime juice
2 Tbs chopped coriander or 1 Tbs coriander paste
2 Tbs honey
4 Chicken breasts (pounded)
Put it all into a blender and blend to thick liquid form.
Pour over chicken breasts and refrigerate for 1-3 hours. Grill 5-7 minutes each side.
I served with rice (brown & white mixed) & snake beans and drizzled it all with some soy sauce. Also served some sliced tomato drizzled with lemon juice.

I was perusing blogs yesterday, and after reading LAUREN'S post about comp shoes (she needs some advice from tall girls!!) I thought I might as well start looking at some sites too. I sold my shoes from last comp, thinking I would never compete again...LOL!
Anyway-I found a site in my favourites that I had saved about 6 months ago...and low and behold... $30 Aussie dollars for a beautiful pair of comp shoes!!! Needless to say I was pretty excited-so I ordered them! They are cute too...they should come this week-and if you're nice (hehehe) I'll show them on my next VLOG.
$30 Aussie dollars! can you frickin' believe that?! I will share the site once I receive them and can say they are fine. I should have them in the next day or so. WOOHOO!!!
Can you tell I'm excited? Fun, fun, fun!!!! Bring on the 2010 comps! I'm stoked!
