TASTY TUESDAY!

Marinated Chicken Breast

4 skinless boneless chicken breasts
1 lemon’s juice
1stsp crushed garlic
1 ½ T fresh parsley chopped
1 T Dijon mustard
1 T olive oil

Put all ingredients, except chicken, into dish, mix well; poke holes into chicken and place into the dish dipping and covering chicken with marinade. Refrigerate for 1-2 hours-turning chicken every so often to re-coat with marinade.
Cook chicken on grill or in pan for about 7 minutes on each side-depending on thickness of breasts.
For easier cooking…pound chicken before marinating to flatten a bit.

Can be served over pasta or rice. A yummy green salad is a perfect side dish.
