
ZUCCHINI PROTEIN BREAD
¼ cup olive oil
1/3 cup unsweetened applesauce
1tsp vanilla
1 whole egg
3 egg whites only
2 cups whole wheat flour (or almond flour or rice flour...whatever you prefer)
½ cup vanilla protein powder
4 tsp baking powder
1tsp ground cinnamon
1/2 tsp ground ginger
3 med size zucchini shredded (let sit on paper towel for a few minutes to drain)
Heat oven to 185C.
Blend wet ingredients in a large bowl.
Combine dry ingredients separately….then add to wet mix and stir until just moist
I baked it all in one loaf dish took about an hour and a ½.
You could divide it into 2 and it will cook quicker.
You could also add chopped pecans or walnuts…I forgot to add them because I’m not a big fan of nuts in my bread….but whatever you choose this is really yummy bread!

Hey girl!! Where'd you get this recipe?? I've been making the Gina Aliotti recipe but it doesn't have the olive oil, applesauce, etc. What are the nutritional breakdowns here, do you know? Would this be how many servings?
Thanks for the recipe Raechelle! Now to try it. Have you done this recipe using almond meal? I'm presuming it will be alot heavier.

Hey Kelly...darn-I was afraid someone would ask me that! I have no idea of the breakdown...I found a recipe on line and then adapted it to my own tastes and preferences...the actual recipe called for 1/3 C of canola-I used olive oil and cut it down to 1/2. And as long as the applesauce is unsweetened-I'd say this is pretty darn healthy eating! I had to put 1/2 in the freezer because it made so much...probably will get 20 good slices out of it!
This is the first time I've made the recipe Kerri..so no, I have not tried almond meal-it's pretty heavy as is-so yeah I don't know if it would rise with almond meal-give it a go and report back :-)
